One of mine and Daniel’s favorite desserts is carrot cake. But we wanted to figure out how to make one of our favorite sweet things vegan. Here is the best version we came up with, and I am positive you could fool anyone! It tastes just like a regular carrot cake and is delicious!!
Next is the recipe for the faux cream cheese frosting. Once the cakes are cooled you can put a layer of frosting between the cakes, and then use the rest of the frosting to frost the top and the sides of the cake.

im soooo glad i found this recipe! this cake is amazing and its not hard! (i’ve made it twice) but i kinda cheated and bought premade vegan vanilla frosting…anyway thanks for posting this!
Made this for my birthday party…delicious! I made in a bundt pan, so I had to play with the baking time…I overshot just a bit and it was a little dry, but I had great vegan ice cream to go with it…great flavor.
Next time I make this, I’ll make in the pans prescribed.

Such a great recipe!! We left out the coconut, walnuts and raisins and added a little more applesauce – it was innnsane. My new staple!
